Plant-Based Leftovers Salad For Dinner

What’s for dinner?

If you live a predominantly plant-based lifestyle, your refrigerator should be stocked with some ingredients to create a quick, healthy and easy meal.

I made some vegan, spinach ravioli a day or two ago. I had about a serving leftover so I created a salad with it.

So what’s in the salad?

  • Cooked, vegan, spinach ravioli from Aldi
  • Fresh, organic blueberries
  • Organic Spring Mix also from Aldi
  • A drizzle of extra virgin olive oil
  • A drizzle of fig balsamic vinegar
  • A dash of salt

That’s it! Delicious, nutritious and easy to make!

I don’t know about you, but I’m a big fan of Aldi! Their prices are one of the best, and they try to offer a variety of vegan and vegetarian foods and organic vegetables and fruits.

Oh, I forgot to mention I’m a big fan of dark beers. That beverage that is in the fancy glass is Great Divide Yeti Stout, a nice dark, thick beer.

For all you beer snobs, don’t judge me for my choice of glasses. I love to pretend I’m having a fancy drink. Cheers!
