This is my portable lunch.

I had a few errands to run during lunch today.
I have been doing intermittent fasting for over a month. Lunch is usually my first meal of the day.
I’ve lost over 15 pounds. This is partly from fasting, but also I eat predominantly a plant based diet and have for years, and I do yoga and other exercises including running, walking, cycling…
I like to be prepared so that I don’t end up sabotaging my healthy eating habits.
So what’s in the ziplock?
One orange
One apple
Some fennel stock and heart
And homemade green tea Matcha iced
Fennel is one of my favorite vegetables.
It has a licorice, anise flavor, it’s crunchy and juicy, and a little bit fibrous similar to celery but with so much more flavor.
Fennel is also great for digestion and it’s good for your breath.
If you’ve never tried fennel I suggest giving it a shot. You can eat it fresh with nothing on it or you can put it in a salad.
I often put apples in my fennel salad along with a little bit of curry mayonnaise, which I make myself, and some raw cashews, and fresh or dried berries or raisins
