When you just can’t give up eggs on a plant-based diet!

I love eggs! In fact, I find those to be the hardest food to give up in my plant-based lifestyle. Sometimes I allow myself to have a real egg because I like how they taste and I get B12 from them, which is lacking in an all-plant-based diet.

I recently stumbled across Just Egg product at Fresh Thyme, I believe, and decided to give it a try.

I have to say, it did not disappoint! The texture is very much like scrambled eggs and the taste was close as well. The first two ingredients in the Just Egg product are: water and mung bean protein isolate.

The first time cooking it was a little struggle. I think I was stingy on the olive oil and the product stuck to the pan. But the stuck part just ended up tasting like the edge of a slightly over-cooked fried egg…so it was more authentic tasting in the end.

The second time I prepared it, I used slightly more olive oil and it came out just like scrambled eggs.

I cooked the eggs alongside some chopped orange bell peppers, garlic salt, Italian herbs, and threw in some fresh, organic spinach at the end, covered the pan for about 2-5 minutes, just long enough for the spinach to wilt.

Just Egg did not disappoint! I was very pleased with the end result!
