Three Ingredients Peanut Butter Cookie Dough Break-Apart Fudge

I just made this recipe this morning. There are only 3 ingredients(4 if you add chocolate chips, which I did. I came across this post on sixvegansisters.com a while ago and pinned it on my Pinterest board. I finally got around to making it.

The best way I can describe the flavor is it reminds me of a Cliff Bar, but homemade and with less ingredients.

Ingredients

  1. 1 cup oat flour
  2. 1/2 cup natural peanut butter
  3. 1/2 cup maple syrup
  4. vegan chocolate chips

I made a few adjustments to my receipt.

First of all, I didn’t have oat flour, so I made my own by using uncooked Quaker Oats(not the instant) and running it through my Nutri Bullet.

Second, I didn’t have enough maple syrup, so I used agave. I also cut the agave to about 1/3 cup. I figured less sugar was better.

I heated the agave syrup in a dutch oven and added the peanut butter to the pan, once the agave was hot(bubbles started to form), then I poured the hot mixture into the bowl of oat flour and mixed it up. I also added about a tablespoon of Earth Balance butter to the mixture because my dough was too crumbly.

Once everything was mixed together, I formed the mixture with my hands into a ball and transferred it to the pan I. I used a plastic container since it is going into the freezer. I flattened and shaped the mixture into a rectangle and cut it before placing it in the freezer.

I think I added the mini chocolate chips too soon because they melted. So my final product isn’t as pretty as Six Vegan Sisters’ final product.

Since there are no eggs in this mixture, I sampled the dough before I put it in the freezer and I can honestly say it was quiet tasty!
