A quick & healthy plant-based breakfast
This is one of my go-to plan-based breakfasts. It is so healthy, delicious and nutritious. Who needs jam or jelly when you can top your favorite toast with fresh, seasonal fruit?
My go-to fruits in the spring and summer are berries(all kinds), peaches, nectarines, apricots and more.
Only 3 ingredients to make this breakfast
- Sprouted grain bread(I used and like Oat So Healthy from ALDI)
- Nut butter(I used almond butter)
- Organic, fresh blueberries
Serve with your favorite morning beverage. Mine are coffee, specifically my homemade mocha, and water.
This is a hearty breakfast and will carry you for several hours, or until it’s lunch time.
