Eating healthy on a beach vacation paid off

We’re back from our beach vacation safe and sound and down at least a pound

I am happy to report that we are back from our beach vacation and my healthy eating paid off. I stepped on the scale this morning and my weight is now just barely under 160 lbs.

I never strayed from eating cleaning the entire vacation with the exception of a bite of my husband’s dessert one evening and an occasional glass or half glass of wine. The hardest part for me while on vacation was the car ride. It takes about 12 hours for us to get to Hilton Head Island, South Carolina. I have to have something to munch on while driving, otherwise I get sleepy and if I’m the passenger, I get motion sickness. So I made sure I was prepared with a bunch of healthy snacks.

I had a big Trader Joe’s insulated back stock full of healthy snacks to include:

  • Apples
  • Snap peas
  • Mini cucumbers
  • Mini bell pepper in red, orange and yellow
  • Peanuts
  • Raw cashew pieces
  • Brown rice cakes
  • Almond butter
  • Freshly ground peanut butter
  • Fresh blueberries
  • Fresh black berries
  • Zeevia black cherry soda(sweetened with Steevia)

I washed all the fruits and vegetables before we left. My biggest go-to-snack was the brown rice cake with almond butter and fresh berries on top. That was delicious! Who needs jam when you have fresh fruit?

I made my husband and I each a sugar-free(steevia sweetened), iced Frappuccino with sugar-free almond and sugar-free soymilk(heavier on the almond milk). The Frappuccino lasted most of the trip home because I pretty much took baby sips to avoid having to run to a restroom every hour.

I tried to stay true to The Fast Metabolism Diet while on vacation, but when I couldn’t I just made sure that what I ate was a whole food and healthy. I think the fact we biked every single day helped me keep my weight loss under control and I never lost sight of my goal.

I won’t lie to you, it was a little difficult at times, mostly the rides to and from home, but anything can be accomplished when you set your mind to it.
