Our daughter is graduating from high school next month and I am in search of some good, healthy recipes. I think this will do nicely. I’ve made cheese with cashews before, but this recipe is a little different than what I’ve made. It involves tapioca starch. That must be what makes it “Mozzarella” consistency.
