Sometimes I just don’t feel like fussing over a meal but still want to make a healthy choice. I created this simple, quick broccoli, tofu soup that is satisfying, healthy, nutritious and taste good.
Frozen organic broccoli florettes (about a cup per serving)
Extra firm tofu cubed
Garlic salt(season according to taste)
Italian herbs((apply amount to cording to taste are use about a teaspoon to 2 teaspoons)
Water about a (cup for serving)
You can cook this in a pan on a stove, or you can cook it in a microwave in a glass beaker.
Put all ingredients in the sauce pan or beaker and heat until the water starts to turn green from the broccoli and the broccoli is at the desired texture.
And voilà, it’s ready to consume.
Serve with your favorite crackers, croutons, or crostini, and most of all enjoy!
