One of the things I love most about summer is dining outdoors. I seize every opportunity I can because I live in a 4 seasons climate. I have a lovely, deck that overlooks dense woods. Our home faces east/west; so we get the morning sun in the front of our house and the afternoon sun in the back. That works out nicely because I can spend most of my summer days on the back deck with the little direct sun but still enjoy the outdoors.
Today I am enjoying one of my favorite dishes that I created a while back: Sprouted wheat toast with fresh avocado and strawberries. It is one of the most satisfying dishes and contains only 3 ingredients. You can slice the avocado and wash and slice the strawberries while the bread is toasting. It takes about 10 -15 minutes.
I paired my avocado, strawberry toast with iced green tea with lemon and a mystery novel, The Inferno by Dan Brown. Mmm mmm, what a delicious trio! A perfect trifecta for an absolutely glorious summer day!
