All three recipes from Mariah Jo’s Mindful Daze blog sound amazing! I love sweet potatoes. They are packed with Vitamin A and fiber. I personally can’t wait to try the Chickpea recipe. Chickpeas are like tofu, they take on the flavors in the recipe and add a nice texture.
