I like to have something a little sweet with my mocha in the morning. I came across this recipe for a flourless brownie on the Internet. I made it yesterday and am enjoying it with my mocha this morning. I like it enough that I thought it was worth sharing. It has only 5 ingredients.

Bake time: 20-30+ min
Serves: 6-8 bite to small sized brownies
Ingredients
1 cup mashed sweet potato(I cooked mine in the microwave with skin on for about 5 min, wrapped in a moistened paper towel. It’s easy to peal off the skin once it is cooked)
1/2 almond or cashew nut spread(I used almond)
1/4 C cocoa powder
2 T maple syrup(I didin’t have maple, I used Maple/Agave and I added a little extra. I seemed to need more for my tastebuds)
1/4 C Carob chips
greased small loaf pan and line bottom with parchment for easy removal
preheat oven to 350 degrees F
Preparation
The recipe suggests that you heat up the nut spread along with the maple syrup. I put them in a glass measuring cup and heated them on a low setting in the microwave for about a 1-2 minutes and then mixed them together.
In a large bowl, combine mashed sweet potatoes and cocoa. Blend with a mixer. Once mixed, add in nut spread/syrup mixture and blend.
Fold in carob chips.
Pour mixture into pan and spread evenly. It’s about 1/2″ thick once spread.
Bake at 350 for 20 minutes or longer if needed. I had to back mine for about 30 min
Cool, cut and serve with your favorite choice of beverage.
