The only ingredient in this salad that isn’t vegan is the croutons.
Prep & cook time about 10 minutes
Ingredients
2 C Romaine Lettuce – chopped
5 Kalamita olives
1/4 C chick peas drained and rinsed
5 croutons(your choice of flavor, I like Caesar)
1 -2 small, red potatoes roasted in microwave(I buy them at ALDI. They come in a microwave safe bag and take about 6 minutes to cook)
1 T lemon olive oil
Olive Oil spray(I use the Misto Sprayer)
Seasoning: garlic salt, cracked pepper and Italian seasoning(basil, oregano) I like coarse salt and pepper so I use a grinder.

Directions
Put the bag of red potatoes in the microwave and cook according to the instructions on the bag
Clean the leaves of romaine lettuce, blot dry and shred or cut into small pieces and place on plate or in bowl.
Top lettuce with olives, chickpeas, croutons, lemon olive oil and the seasoning mixture listed above then toss the salad.
Once the potatoes are done cooking, carefully open the bag and pour the potatoes into a bowl. Spray with olive oil and season the potatoes with the above listed seasonings. Stir and cut the potatoes in 1/4s and place on top of the salad or to the side.
